Recreate our Chicken Cordon New recipe featured at the Science After Dark cooking demo.
Stainless steel pan (not non stick), whisk, saucepan, chef knife, cutting board, spatula, potholders, tasting spoons, cooktop, oven
Ingredients for Chicken Cordon New:
4 chicken breasts
Small package of fresh organic spinach leaves
4 slices of havarti cheese
4 slices of prosciutto
Olive oil (for searing)
Large strong natural (no color) toothpicks
Ingredients for Parmesan Cream sauce:
1/2 pint heavy cream
1/2 to 3/4 cup fresh grated parmesan cheese
Preheat oven to 425 degrees. Pound out chicken so it can be rolled, then lightly salt and pepper one side. Lay spinach leaves, cheese slices, and prosciutto on the chicken. Roll chicken and use toothpicks to secure. Sear chicken on each side. Finish off in oven 10 to 15 mins (check 8 mins in) until not pink.
After the chicken is in the oven, over low-medium heat warm up the heavy cream in a saucepan. When cream is warm, whisk in parmesan cheese until it melts. Add salt and pepper to taste.
Remove chicken from oven, slice on an angle and fan out on a plate. Drizzle parmesan cream sauce over chicken.
